buttery matcha shortbread cookie recipe
Do you love the taste of matcha and want to include it in a baking recipe?
Pat’s got your back! These Matcha Shortbread Biscuits are super quick to make, and are a delicious, buttery, sweet treat! Perfect to serve with a Matcha, tea or coffee, or just on it’s own!
Ingredients to make Matcha Shortbread Biscuits:
- 150g Butter (softened)
- 1/3 cup Caster Sugar
- 1 tsp Vanilla Extract or Paste
- 1 3/4 cups All Purpose Flour
- 3 tbsp Periwinkle Pat Matcha powder (or another Ceremonial Grade Matcha! Use more/less depending on how strong you want the flavour!)
- Dash of Milk (depending on consistency of your dough!)
Method:
1. Preheat your oven to 180 degrees celcius or 160 degrees celcius Fan Forced
2. Cream together the butter, sugar and vanilla in a bowl
3. Sift in the flour & Matcha powder and mix together until you form a dough! Add in a dash of milk if it’s too dry/crumbly
4. Press into a pan lined with baking paper & score the dough into the biscuit shapes. Press holes into the dough with a fork
5. Bake in the oven for around 18-20mins or until cooked through
6. Once cooked, immediately cut the biscuits with a knife, and sprinkle with extra sugar!
7. Let it cool completely in the pan & enjoy!
