healthy banana muffins with matcha recipe
A delicious & easy muffin recipe to enjoy as a healthy snack on-the-go, or healthy dessert! This Matcha & Banana Muffin recipe with no added sugar is going to blow your socks off and make you drool for more! Pat made this simple muffin recipe in under 30mins! Feel free to pop the batter in a loaf pan to make this into a tasty no-sugar banana bread recipe instead! Pat loves cooking with Matcha (& baking with Matcha!), so this recipe was an absolute MUST!
Ingredients to make Healthy Matcha & Banana Muffins:
- 3 Ripe Bananas (Mashed)
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/4 cup Greek Yogurt or Natural Yogurt
- 1/3 cup Vegetable Oil or Melted Coconut Oil
- 1/3 cup Maple Syrup
- 1 + 1/2 cups Plain Flour
- 2 tbsp Periwinkle Pat Matcha
- 1/3 cup Rolled Oats
- 1/2 tsp Cinnamon
- 1 tsp Baking Soda
- 1/2 tsp Salt
+ Optional Toppings: Pat loves topping the muffins with Walnuts or extra Oats! For an extra decadent sweet treat, why not try White Chocolate Chips!
Method:
1. Preheat the oven to 165 Degrees Celcius & line/grease your muffin tins!
2. In a big mixing bowl, mash up your bananas with a fork, and add in all your wet ingredients and mix well (Eggs, Yogurt, Vanilla, Oil, Maple Syrup)
3. Add in all your dry ingredients, and fold gently, JUST until there are no dry patches, and everything is incorporated… Don’t overmix the batter… PLEASE!!!! (Flour, Baking Soda, Matcha, Cinnamon, Oats, Salt)
4. Divide mixture into your muffin tins/baking tray, and sprinkle on any of your fave toppings!
5. Pop into the oven for 18 - 20 mins, or until a toothpick comes out clean!
6. Let the muffins sit in the tray for a few mins to cool, and then carefully transfer onto a cooling rack to cool completely, and ENJOY!! 💛
