matcha healthy protein pancake recipe

A healthy, quick and easy breakfast recipe! Pat’s Matcha Protein Oatmeal recipe takes less than 5 mins to make! Especially when you have to rush off to work, school or just want a simple breakfast!

Ingredients to make Protein Pancakes with Matcha:

- 1 Ripe Banana (the riper, the better!)
- 1 Egg
- 1/2 tsp Vanilla Extract or Paste
- 1 tbsp Chia Seeds
- 1 tbsp Flaxseeds
- 1 tbsp Vanilla Protein Powder
- 1 tsp Periwinkle Pat Matcha Powder
- 1/4 tsp Cinnamon
- 1 tsp Baking Soda
- Olive oil for cooking the pancakes!
- Your favourite toppings!! Pat loves Greek Yogurt, Banana, Berries, Hemp Seeds & Maple Syrup!

Method:

1. Mash the banana in a bowl and whisk in the egg & vanilla extract!
2. Add in all the dry ingredients, and whisk up until a thick batter has formed! (If it’s too dry, just add a touch of milk!)
3. Pop some oil on a pan on medium heat.
4. Once hot, place a scoop of batter on the pan. Cook for 1-2mins on each side (or until golden brown)
5. Serve up immediately, pop on your favourite toppings and ENJOY!! 💛
